As for your sauce, it looks great, and don’t kid yourself: 89% of all tomato sauces are made from canned tomatoes, in Italy, in America, in Zimbabwe. San Marzano tomatoes packed in Italy and Bel Roma (et al) from California are far superior to white-cored fresh ones from Mexico.
