This is great! I’m so glad to have found this linked on eggbeater! As I mentioned over there, the one time I tried to make gnocci, i ended up pouring a giant wad of boiled potato mush into my strainer and then throwing some dry pasta into the pot for dinner that night. Very depressing. I’ll try again now that I have better instructions. And I can’t wait to learn more about the chestnut flour gnocci! But I don’t want to get ahead of myself…
